Greenshields Pilsner is an especially fine, high quality flavorful lager brewed in the
Bohemian-Pilsner style. The starting gravity for our Pilsner is a little over 12° Brix.
We use a special low temperature lager yeast to achieve a high level of attenuation
(that is, the yeast converts most of the sugar to alcohol and CO2). The end result is
an alcohol level that is around 5.3% by volume. We use Pilsner two-row barley
malt to produce this light golden colored, clean tasting beer. It has a full, round
malty flavor that is balanced by a middle of the range hopping level for its beer type.

Greenshields Amber, our most popular beer, is a full flavored ale with good body, flavor
and hopping. A special top fermenting ale yeast is combined with wort made from primarily
European malts and three different hops. Hopping is assertive although not high in bitterness
at 30 EBU (European Bitterness Units). Starting gravity is a little over 13° Brix, with final
gravity around 2° Brix, producing a nice finish with a pleasant aftertaste. The alcohol level
is around 5.8% by volume. Our Amber is brewed to be in the English Extra Special Bitter class.
It is a good beer for most foods but it is especially good where you might think of drinking
a good red wine. |

Greenshields Nut Brown is an ale (top fermented) brewed with three different 2-row barley malts.
It has a good beginning gravity of around 13° Brix and finishes around 2.5° Brix. The alcohol
strength is in the mid-five percent level. Our choice of ingredients produces a slight malt
sweetness balanced with a medium level hopping at a rate of 27 EBU. A very small amount of a
very dark roasted malt gives our Nut Brown its rich brown color. Although the color is dark,
this is not a heavy bodied beer like our Stout. The Nut Brown has a nice clean aftertaste that
allows it to be matched with most foods. It is a very well rounded drinkable beer. |
Greenshields Stout is the biggest beer that we brew regularly. The alcohol strength is around
5.9 % by volume (6% is the maximum in North Carolina). We achieve a refined full, rich flavor
through a decoction brewing technique using four different malts. We select special malts to
give color, flavor and fullness while minimizing "husk astringency" usually associated with
beers brewed with dark roasted malts. The hop level is balanced to the malt sweetness. Our Stout
has 50 EBU's which is moderate for stouts. The combination of malt, hops and the decoction process
produces a mellow taste compared to Irish stouts such as Guinness. |

Our India Pale Ale is a big, robust, golden colored ale. The color comes from the
four different malts we use, one domestic and three European special malts. We balance
the big malty flavor of our IPA with a healthy hopping of 50 EBU. This produces a
relatively high bitter level that is traditional for this type of beer. We use a three
stage hopping regime. One hop is added as the kettle or bittering hop, and the other
three (the flavor and aroma hops) are added later in the boil. The alcohol level,
around 5.9% by volume, gives our IPA a slight sweetness to its finish. Our IPA is a
good companion to hearty or spicy flavored foods, and of course is a good choice by
itself. The India Pale Ale style came about through the English experiences of shipping
beer by sail in the nineteenth century beer to the soldiers serving in India. They found
that big beers with higher alcohol content and strong hopping survived and even improved
in taste.
